365 Pickle Salad

Fresh Pickles aren't just late summer treats any more. Enjoy this healthy dish year round with this quick and easy salad which only requires 6 ingredients.
Serves: 4 servings
  • 3 cups of Cucumber, sliced thinly
  • ½ cup Red Onion, sliced thinly (about ½ an onion)
  • ⅓ cups Unseasoned Rice Vinegar
  • 1 tsp Dill (fresh, frozen, or dried)
  • ½ tsp Salt
  • 1-2 cloves of Garlic, minced
  1. Place all ingredients in a bowl, toss gently.
  2. Place in fridge for at least 15 minutes to let flavours meld together.
Use fresh dill if available, if not use frozen, last resort -- use dried for the "most authentic" pickle taste.
I originally used one large garlic clove for this salad. It was quite powerful. Adjust the recipe to your own garlic presence preference.
